Hi-
I need to transfer a domain name to a new server- As well as their website. But they rely on email. I need to make sure that all goes as smoothly as possible without any downtime. All I know is that I have info for my server, their server and the technical contact...how can I make this work?

The new host will set-up a new account with the same name but not with the same IP-adress as the old one. When the DNS-servers are updated, the mail will be automaticly be re-directed to this new IP-adress.
There's only the problem that not all the DNS-servers are updated within 24-hours. So keep the old mail-account for 1 or 2 weeks, and no-one will know that there was a domain-transfer.....
At the company they only need to set their new email-accounts.

How would I keep the old mail accounts? Would I talk to the old Web hosts to set that up. Then buy the account space at the new host and set up the emails exactly the same way - before making the transfer?

First buy the new account and tell them that your moving a domain. Then they will tell you what to do next.
For the first few days (weeks) you could keep the present email-accounts and set-up the new email-accounts as you would when you have more than one emailadress (like I have 4 emailadresses, all delivered in at once in Outlook)
So the first days you will retrieve the email(s) from both of the emailservers, and when you don't get any email from the old account, you can remove that account.
Usually you've got a months term of notice. That should be long enough for all the DNS-servers to be updated....
