Trouble with FTP

I've been making HTML/CSS-based websites for about 3 years, but I'm used to editing the files online using a control panel. I recently changed my host, and now I have to use FTP.

I'm not having ay trouble getting FTP to work for me, but I AM having a lot of trouble getting my files to show up on my website after I upoad them. The only HTML that seems to work are the link and center tags, plus the title. Everything else is just symbols and jumbled text.

I'm probably not using the right text editor (I'm using TextEdit; I'm a Mac user), but I'm not sure what I'm doing wrong or how to correct it.

Could someone help or at least point me in the right direction? What programs do you use on your computer to write files before uploading them? Help!

notepad. Does the site look fine on locally before you upload the files?

In the save-as dialouge, try to make sure that you're saving it with the same encryption that you're declaring in the head.
