I've used "http-equiv" in all my meta tags. I read that it can be used in place of "name" but I was just wondering if there any disadvantages to using one or the other, and what the difference between the two are.

I didn't really think about which one I was using at the time... "http-equiv" seemed to be used by Dreamweaver.

The type of a meta tag depends on its use. The http-equiv is for simulating HTTP protocol headers.
