Is there any way to edit a PDF document, to enable me to make the line length of the text shorter? I want to make the width of the text content narrower.
This is so I can use a larger font size to view the document, without loosing the RHS of the text off the edge of the screen. I can't stand having to scroll a PDF document horizontally to read it.
I was looking for some sort of script that would do a complete PFD document in one go.

Jabez,
If you own a full copy of Acrobat you can edit text. But this is limited to small typo changes and not sentence rewraps. When a document is saved into PDF format the sentences are seen as individual lines of text, no longer in paragraph form. Unfortunately from my experience I don't know of a way to rewrap the text in a PDF document without going back to the original file it was created from.
Do you have the original file?

No I don't have the original file. I'm trying to use PDFedit at the moment. There must be some way that the PDF format encodes an EOL mark on a line of text?

PDF does write returns at the ends of each sentence, but when a file is saved to a PDF format the sentence break down into individual words and sentences. There really isn't anything that is a "true paragraph".
Without having a paragraph there is no way to adjust the width of the copy block.
Here's a work around and some further information.

I remeber someone telling me about a program that does allow full edit functionality for PDFs without having to go back to the original file and recreate the PDF and without the limitations on editing that the full version of Acrobat has. I can't remember what the program is called but I do remember that they were complaining because of the price of the software to do that costing several thousand dollars.
