Is there a way to add another keyword to the forum
that duplicates the [ p h p ] and [ / p h p ] (spaces added for viewing)
so that the JS beginner sees the code with the color comments
and does not ask how they can use the "PHP Code:" published on their system?

Seems to be a common question for the novice.

Perhaps a brief description of the 'Post New Thread' options in a sticky?

Also, is it possible to allow backslashes in the php code blocks?

It is difficult (and almost untenable) to insist that new member actually READ the FAQs provided when they joined, but you could add a link to this FAQ and when you reply to a member's post, you could respectfully ask & remind them to use the vB code that is available here. I think that the [noparse] vB code would make the 'backslash' work, if I understand the implication..
