multi-level category

I have a multi-level category separated by a | stored as a string like this:

Agriculture, Forestry & Fishing[1]|
Agriculture, Forestry & Fishing[1]|Growing of crops; market gardening; horticulture
Agriculture, Forestry & Fishing[1]|Farming of animals
Agriculture, Forestry & Fishing[1]|Mixed farming
Agriculture, Forestry & Fishing[1]|Agricultural and animal|husbandry service activities, except veterinary activities
Agriculture, Forestry & Fishing[1]|Hunting, trapping and game propagation and related service activities
Agriculture, Forestry & Fishing[1]|Forestry, logging and related service activities
Agriculture, Forestry & Fishing[1]|Fishing, operation of fish hatcheries and fish farms; service activities incidental to fishing
Energy and manufacture of mineral products[2]|
Energy and manufacture of mineral products[2]|Extraction of minerals, oils and natural gas, and related service activities

The above is just an example there can be more categories more levels (ie more pipes) so the code has to be flexible to cater for different category levels on different jobs.

What needs to be done is each category and sub category has to be placed in separate drop down boxes on a search form.

At the moment I don't have a clue how I am going to achieve this, as I am a Javascript beginner. So any feedback or guidelines would be appreciated.
