Thought I would post this in the right section.

I just got adobe flash cs3 and opened up a .fla header in which I like to change the text.

Holy hell.. so many options. Can anyone help me or point in the direction of a online training course or something?

Where you see all the different layers, under the eye icon, start clicking on each layer (to make it invisible) until the text you want to edit disappears. That identifies the layer the text is in. Under the padlock icon, click all layers to lock them from change except the text layer you want to edit.
Then click on the Text tool, and use the Text tool to click on the text you want to edit.... and edit!

I tried what you said and none of the layers I clicked made the text disappear. It did put a box around it but no disappearing.

I suggest you take time to learn this editing that file so that in the future you can make more beautiful flash animations
