I would really like some advice on choosing an open source CMS.

I am building a site for a travel company, with css template. I would also like to use a few plugins like a calendar, image slide show, online shop ect. Content is to be updated by non html people.

I have started using Joomla but I am finding it difficult because it is designed from a blog point of view with catergories and sections rather than static pages.

Does anyone have any advice on a CMS that is easier to use and more logical when creating a company website not a blog type site?

Check out CMS Made Simple (http://www.cmsmadesimple.org/). It's pretty flexible, open source GPL2 and has really good forum support. I've used it for a couple of client projects. The only thing I don't really like is that it uses Smarty templating (it confuses me sometimes!) but has proved to be stable with very few hiccups.

I suggest you to use the wordpress as CMS which easy to manage. Also get support easily on your problem. For your requirement you can use many different plugins:
