weird chars showing on macs only

Hi all,
I've got a new problem , on the mac os only funny chars are appearing where single inverted commas are meant to be(those yolks are a royal pain in the tush) . Just wanted if there was a way around this little problem. I could just use double inverted commas but am loathe too as it's not befitting grammatically. here's the link . You are using character number 140 and you are declaring character set iso-8859-1. There is no character 140 in iso-8859-1. See http://www.utoronto.ca/webdocs/HTMLdocs/NewHTML/iso_table.html.
