I had a look at the apple site, but didn't find it:

if I need to give users some instructions, like "mouse over for x, click to do y", what terms would you give to ipad users?

It should be intuitive. The users should know where to click. With descriptive enough text, and obvious buttons/links/etc... you shouldn't need to tell them. There is no mouse over, only a press, and a drag. Both very obvious to the iPhone/Pad user.

"Click to add to other side" becomes, "Add to right side".... "Click for x" becomes "x".
