I have an ecommerce enable website that I use for selling over 1000 different sku's of products. When I started this project I used Miva Merchant for ecoomerce and backen CMS. But now all the ecommerce cart stuff is done through a link type system called shopatron. To bridge the gap from my site to my shopatron site I just edited out the buy me links in miva and made a jump link to my shopatron area. So the entire product inventory and such is done through miva but I dont use it for ecommerce. Is there a content management system out there that enables me to upload CSV files to my web that handles all the product data?

You could use OpenCart, OpenCart is a opensource system.
If you install opencart, than you can use an import/export module to import your CSV.

Hope that'll get you in the right direction.

The best combination you could ask for.

Products can be imported through CSV and very easy to integrate.

with so many virtuemart plugins and modules i am sure you would find it useful.

more information check this link http://extensions.joomla.org/

hope this helps

Prestashop and Magento are other solutions for a shop like this. They are Open Source and you find a lot of plugins / modules to use it.
