Definition of ASCII?

To the best of my knowledge, ASCII is basically plain text. Can anyone offer an extended explation? Does ASCII come in two formats, delimited and fixed length?

A string of 7 binary digits represents each character.
Each letter assigned a number from 0 to 127.
