I've got a client that is interested in a website in Chinese. I've done some research and it seems like a bigger project than I'm willing to take on. The encoding is what I worry the most about. Can someone direct me on how to find a good Chinese developer? How do other companies handle multiple languages - especially one with a differing alphabet?

The encoding is not that big a challenge: I've found it best to use UTF-8 -- it reads most all Traditional Chinese and Simplified Chinese. However, if you want to be more specific with the encoding, ask your client if they're using Traditional Chinese or Simplified Chinese, and if they need Hong Kong Chinese words.
Also, will the client be supplying the Chinese content?
As far as finding a good Chinese developer goes... er, if you're willing to work across the world and with differing time zones, try starting the search in www.google.com.hk.
