ok, when you sign up for hosting, do you pay the full amount up front or does it go by month?

Depends entirely on the host, but most hosts allow a range of ways to pay. For example, Dreamhost allows you to pay by the month, by the year, or every 2 years.

Edit: Ah, just noticed that you mentioned godaddy in the title. It would seem that godaddy do a similar thing to Dreamhost if you check here:

Not to hijack the thread but I'm confused about GoDaddy. I've always registered through Network Solutions. Do I own my domain name the same way with GoDaddy? Or is it one of those goofy things where you can lose it if you change hosts or on a whim of their own?
