Menu NAVI Vertical hidden and unhidden items. Help Please

Hi Guys, I am looking to do a site with a vertical menu that a customer liked on another site (Martha of all Devas). THE VERTICAL NAVI IS WHAT I AM LOOKING AT.

This site I need to create has many sub catagories and needs to have hidden menu lists, until clicked (for ease of use)
If anyone out there has a good idea where to start or any of the lingo associated with this, I would be so grateful.
I like the way the roll-over effect of highlighting and the arrow pointer shows. Are these images or text?
