    it give me the error: Notice: Undefined index: email

    I have shorted the unnecessary parts of the pages and left the main parts, anyone able to help me i want it to echo the email they inputted, on on seller_signup_continue.php.

    Well, nowhere in the code you've posted is there a place (that I can see) where you define/assign $_SESSION['user_info']['email'].

    One thing I will suggest, though, is that if you are going to do a header() redirect, immediately before you call it, first call session_write_close() to make sure all current session data in the calling script is saved.
